Chicken roasted in pitta bread with caramelised onions and sumac, served with a tomato, cucumber and fresh mint salad
In this dish, which means ‘hot’ in Arabic, chicken is simmered in a stock containing cinnamon and other spices. It is then baked in the oven on a bed of pitta bread that has first been soaked well in the stock and covered with onion fried in sumac until golden. It comes with a super-fresh, roughly chopped salad of cucumbers, tomatoes, fresh mint, olive oil and lemon juice.
